This dynamic course is designed to develop junior management and supervisory level learning for a career within the Hospitality Industry. A career which can take you around the world with many cross transferrable skills within hotels, restaurants, patisseries, bakeries and contract catering. This qualification can also be a platform to becoming a home economics teacher, which there is a shortage of in Scotland.

Who is the course for?

This course will prepare you for a career in junior management within a kitchen in the Hospitality industry. The HND Professional Cookery (Year 2) is also a pathway for those who are looking to pursue a career in Home Economics teaching. The course is for those who like to be creative, think outside the box, enjoy problem solving in both a practical and theoretical environment, working with people and team building. Explore a career path offering versatile skills which are transferable across hotels, restaurants, patisseries, bakeries and contract catering worldwide.

What will I study?

You will study a range of subjects significant to the world of Hospitality. For example: • Gastronomy • Kitchen Planning and Design • Management of Food and Beverage Operations • Managing Human Resources in Hospitality • Professional Cookery with Management: Graded Unit 2 • Further optional units will be studied

You can progress to: • Year 1 of BA Hospitality Management at Napier University • Year 3 BSc (Hons) Education & Curricular Studies with Teaching Qualification – Home Economics route at Strathclyde University

How will I be assessed?

A wide mix of assessment approaches are used including presentations, practical work, multiple-choice tests, short report writing, and observations are all part of the assessment process. On successful competition you will achieve a Higher National Diploma (HND) in Professional Cookery at SCQF level 8

Why should I choose this course?

The hospitality industry is projected to continue to grow by 4% over the next ten years, which will mean a continued increase in job opportunities. You’ll be encouraged to work part time alongside your studies and on completion can earn upwards of £24k in a fast progressive worldwide career. It can also lead to becoming a home economics teacher where the starting annual salary for a probationer teacher is £32,217.

• Sous chef • Chef de Partie • With the management experience and skills gained on the course, you may start your own business • If you have relevant industry experience you may be able to work to being a head chef/executive chef with the management skills developed on the course • Home Economics teacher within a Scottish secondary school

What are the entry requirements?

• You must have an HNC Professional Cookery/ HNC Professional Cookery (Pastry) at Level 7 for entry in to year 2 of HND Professional Cookery • Three National 5 qualifications one of which must be English. • If English is not your fist language, you should have ESOL Higher or equivalent for HNC/D courses. • Work experience in the hospitality industry.

What are the interview arrangements?

Offers made will be based on your application. Those who meet the minimum entry requirements will be invited for an individual interview.

Fees for full time is £1285

This course is eligible for SAAS.
